White Bean Salad

As promised, here's the recipe for the  white bean salad we had yesterday.  A few weeks ago we had something almost exactly like this from a Greek food wagon outside the NYS Capitol.  It was heavenly.  So we tried it ourselves, and it really couldn't be easier.

Click on the picture for a closer look -- there's wonderful dill from the garden in there, although you could use dill from the store just as easily.


It's cheap, satisfying, really tasty, and healthy to boot! 

So just get a bowl and mix together:

2-3 cans of white beans, rinsed well (navy beans or whatever beans you like best)
olive oil - enough to coat the beans generously, but not so much there is puddle at the bottom
apple cider vinegar - just a splash for a little zip
1/2 medium onion, finely minced.  I like a red onion here
about 1 tablespoon snipped dill
about 1 tablespoon parsley flakes

Stir it all up, and put it in the fridge for at least an hour or so for the flavors to mingle.

That's all there is to it!!!
